I am always inspired by young children, in their passion and willingness to undertake different things. I also have been looking for recipes for folks in this season of “stay at home”.
When I saw Raffi’s mother, Rebecca, post this one, I reached out to here and received her permission to put it up in Positive News For You.
Many of you will remember Raffi from a few other stories we posted in the past. One was with Luca Paris, and the other was Raffi’s fundraising endeavor as a goalie for a local hockey team. {{more}}
Here it is Raffi’s Pizza Sauce recipe.
No-cook pizza sauce
Ingredients:
- 1 1/2 cups San marzano tomatoes (regular plum is fine too!) about a 28oz can with half the liquid poured off.
- 3 TBSP olive oil
- 2-3 cloves garlic; minced
- 4-6 fresh basil leaves torn
- 1/4 cup flat leaf parsley; minced
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp red chili flakes (for a kick)
- 1 tbsp Parmesan cheese
- 1/4 tsp salt
- Cracked pepper to taste
Mix all the ingredients together and let sit at room temperature 3 hours or in the fridge overnight. That’s it!
